
Vegan Pumpkin Kheer (Pudding) - Recipe

This is why we start our Navaratri day 1 intermittent fasting with a nutritious and delicious pumpkin kheer (pudding) recipe.
Ingredients :
- pumpkin
- soy milk
- cardamom
- raisins
- dates
- cashews
- almonds
- saffron
Instructions :
Wash and soak dates for about 2 hours and chop them into small pieces. In a large heavy-boolmed saucepan, add soy milk, grated pumpkin, chopped dates, and saffron. Cook over low-medium heat until l the pumpkin's raw smell disappears (20 minutes). Add cashews, almonds, raisins, and cardamom powder. Mix well. Serve hot or cold.
