  • 8 oz fresh Chinese dates (about 8–10 medium-sized dates)
  • 1 cup almonds
  • 4 oz raw cashews
  • ¼ cup raw pistachios
  • ¼ cup almond butter
  • ¼ cup pumpkin seeds

How to Make Mixed Nuts Energy Balls

Remove pits from the dates if needed.
Lightly toast the nuts and seeds (optional) to enhance flavor.

Step 2: Blend the Nuts & Seeds

In a food processor, add almonds, cashews, pistachios, and pumpkin seeds.
Pulse until they form a coarse meal.

Step 3: Add Sweeteners & Spices

Add dates, shredded coconut, almond butter, cardamom, and black pepper.
Blend until the mixture becomes sticky and well combined.

Step 4: Roll into Balls

Scoop out small portions and roll into bite-sized balls.
