Why Turmeric?
Turmeric does much more than give this quinoa its gorgeous golden color.
Turmeric contains curcumin and other naturally occurring antioxidant
compounds with anti-inflammatory properties that may help support the body's
healthy inflammatory response. Rather than thinking of any single ingredient as
a treatment, I like to think about turmeric as one of many wholesome plant
foods that can contribute to an overall health-supportive dietary pattern.
Pairing turmeric with quinoa, vegetables, fresh lemon, and other plant
foods makes this recipe a delicious way to bring more variety and plant
nutrition to your plate.
Why Quinoa?
Although we often prepare quinoa like a grain, it is technically a seed.
One of its nutritional advantages is that its protein contains all nine
essential amino acids, making it a complete plant protein.
Quinoa also provides dietary fiber and health-promoting minerals such as
iron and magnesium. Its mild flavor makes it an excellent base for vegetables,
herbs, spices, legumes, nuts, and seeds—which is why it works so well in this
recipe.
