GoNanans Banana Bread Makeover - Therapeutic Thursday Recipe

I'm not usually big on baking or snacking—I prefer sticking to two wholesome meals a day, accompanied by a soothing afternoon tea and my homemade, healthy laddus (Energy balls). But when the kids come home, their love for treats inspires me to whip up a classic Banana Bread with walnuts to satisfy their Western cravings.


Recently, I’ve embraced a 100% whole food, plant-based vegan lifestyle, and I’m loving how amazing it feels! While I enjoy cooking from scratch, baking isn’t exactly my forte, so I often look for ways to simplify the process. During a trip to the Whole Foods baking aisle, a product from GoNanas caught my eye. I decided to give it a try—with a few healthier tweaks of my own to the package instructions. The result? A delicious banana bread that my whole family absolutely loved!

Instructions:

1.      Preheat your oven to 350°F (175°C).

  1. In a bowl, mash the bananas until smooth.
  2. Add oat milk, freshly squeezed orange juice, and orange zest to the mashed bananas. Mix well.
  3. Incorporate flax seed powder, oat bran, and walnuts into the mixture. Stir until everything is well combined. If the mixture seems too thick, you can add a bit more oat milk.
  4. Lightly grease a baking pan with a small amount of canola oil.
  5. Pour the banana mixture into the greased baking pan.
  6. Bake in the preheated oven for 55 minutes or until a toothpick inserted into the center comes out clean.
